Dried Apricot Cake – Recipe for Preparing Dried Apricot Cake
Dried apricot cake is one of the most delicious types of fruit cakes. The addition of fruits gives the cake a unique and distinct flavor. - ½ cup of dried apricots, chopped into small, even pieces
- ½ cup of raisins
- ¼ cup of milk
Cake Mixture Ingredients:
- ½ cup of melted butter
- 1 cup of powdered sugar
- 2 large eggs
- 1 teaspoon of liquid vanilla (or powdered vanilla if liquid is unavailable)
- ½ teaspoon of baking powder
- ¼ teaspoon of salt
- 1½ cups of white flour
- ¼ cup of crushed nuts
Sugar Glaze Ingredients:
- 1 cup of powdered sugar
- 1 tablespoon of milk
Garnishing Ingredients:
- 5 pieces of dried apricots
- 15 nuts of your choice
How to Prepare Dried Apricot Cake:
Prepare the cake pan: Begin by lining a rectangular cake pan with parchment paper and set it aside. In a medium bowl, mix the chopped dried apricots, raisins, and milk. Stir well and set the mixture aside.
Prepare the cake mixture: In a mixer bowl, combine the melted butter and powdered sugar. Beat on medium speed for 2 minutes until the mixture is smooth and light in color. Add one egg and the vanilla, and continue beating for another minute. Then add the second egg and beat again.
Mix dry ingredients: In a large bowl, sift together the flour, baking powder, and salt. Gradually add this to the butter mixture in the mixer and continue beating on medium speed for about 3 minutes. Add the apricot, raisin, and milk mixture you prepared earlier, and continue mixing until you have a smooth and well-combined batter.
Bake the cake: Pour the cake batter into the prepared pan. Preheat the oven to 180°C (350°F). Place the pan on the middle rack and bake for 60 to 70 minutes. Once baked, remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then, turn the cake out onto a wire rack to cool completely.
Prepare the sugar glaze: While the cake cools, prepare the glaze by placing the powdered sugar in a large bowl. Gradually add a little milk and whisk with a hand whisk until you get a smooth, silky glaze.
Finish and serve: Once the cake has cooled, place it on a serving dish. Drizzle the sugar glaze over the cake and garnish with dried apricot pieces and a sprinkle of nuts.
