  • 500 grams of peeled and diced potatoes.

  • 1 bell pepper, chopped.
  • 1 large onion, chopped.
  • 500 grams of ground beef.
  • 2 tablespoons of olive oil.
  • 5 tablespoons of tomato paste.
  • 1½ cups of water.
  • 2 chicken stock cubes.
  • 2 teaspoons of curry powder.
  • 1 teaspoon of mixed spices.
  • 1 teaspoon of ground cinnamon.
  • 1 tablespoon of dried Italian herbs.
  • Black pepper (to taste).
  • Salt (to taste).

How to Prepare Eggplant Casserole with Potato Balls:

  1. Prepare the Eggplant:
    Sprinkle salt over the eggplant rounds and set them aside for about 60 minutes to remove excess moisture.

  2. Heat a small amount of oil in a pan over medium heat and fry the eggplant rounds until they turn red. Set them aside.

  3. In the same pan, fry the potato and carrot slices until they are half-cooked. Place them on paper towels to absorb excess oil.

  4. Cook the Meat:
    In a separate pot, cook the ground beef over medium heat. Add the mixed spices, curry powder, cinnamon, black pepper, salt, and Italian herbs, stirring frequently until the meat is browned and the liquid has evaporated.

  5. Add the bell pepper and tomato paste, stirring to combine. Pour in the water and add the chicken stock cubes, stirring until everything is well blended and the mixture comes to a boil.

  6. Cover the pot and let it simmer for 5 more minutes, then remove from heat.

  7. Assemble the Casserole:
    In a suitable baking dish, layer the meat mixture at the bottom. Follow with a layer of fried eggplant, potatoes, and carrots. Add another layer of the meat mixture, followed by more eggplant, potatoes, and carrots. Finish with a final layer of the meat mixture on top.

  8. Cover the dish with aluminum foil.

  9. Bake:
    Preheat the oven to 180°C (350°F). Once heated, place the covered dish in the oven and bake for about 30 minutes until fully cooked.
