Eggplant pizza is known for its delicious taste and high nutritional value. It's also easy to prepare, requiring no more than 10 minutes to get ready and an additional 20 minutes to bake. Dough Ingredients:

  • 5 teaspoons of yeast.
  • 1 cup of warm water.
  • 2.5 cups of all-purpose flour.
  • 1 teaspoon of salt.
  • 3 tablespoons of olive oil.
  • 1 cup of hazelnuts (roasted and ground).
  • 1 tablespoon of rosemary.

Topping Ingredients:

  • 4 medium-sized tomatoes, mashed.
  • 3 cloves of crushed garlic.
  • 150 grams of mozzarella cheese.
  • 2 thin eggplants, sliced into thin rounds.
  • ½ cup of mushrooms.
  • 1 red bell pepper, sliced.
  • 1 teaspoon of salt.

How to Prepare Eggplant Pizza:

  1. Preparing the Dough:

    • Grease a medium-sized bowl lightly with oil.
    • In another bowl, mix warm water with the yeast and let it sit until activated.
    • In a large bowl, combine the oil, ground hazelnuts, flour, salt, rosemary, and the yeast mixture. Mix all ingredients together until you form a firm dough.
    • Cover the bowl with plastic wrap and let the dough rise in a warm place for 60 minutes until it has doubled in size.
    • Roll out the dough on a floured surface.
  2. Preparing the Toppings:

    • Grill the eggplant slices in a baking tray.
    • In a pot, heat the mashed tomatoes over medium heat and add salt and crushed garlic. Once it boils, remove from heat.
    • Spread the tomato sauce over the rolled-out dough in a lightly greased baking tray.
    • Top the sauce with a layer of mozzarella cheese, then distribute the grilled eggplant, red bell pepper, and mushrooms over the pizza.
  3. Baking the Pizza:

    • Preheat the oven to 180°C (356°F).
    • Place the pizza in the oven and bake for 20 minutes or until fully cooked.
