Ingredients for Egyptian Kunafa:
Kunafa:
- 500 grams of Kunafa dough (shredded dough, also known as “Athmalya”).
- 125 grams of butter.
- 1 can of clotted cream.
- Ground pistachios (for garnish, as needed).
Sugar Syrup (Sharbat):
- 2 cups of sugar.
- 1 cup of water.
- 1 tablespoon of lemon juice.
How to Prepare Egyptian Kunafa:
Preparing the Syrup:
- In a pot over medium heat, combine the sugar and water. Bring the mixture to a boil, stirring occasionally.
- Once it begins to boil, reduce the heat and let it simmer until the syrup slightly thickens.
- Add the lemon juice and stir for an additional 1-2 minutes.
- Remove the pot from the heat and set the syrup aside to cool completely.
Preparing the Kunafa:
- Melt the butter in a pan over medium heat, then remove from the heat.
- Divide the Kunafa dough into two equal portions, placing each portion into a separate bowl.
- Pour the melted butter over one portion of the Kunafa dough and mix well until the dough absorbs the butter completely.
- Grease a baking tray with a little butter and press the buttered Kunafa dough firmly into the bottom of the tray to form a base.
- Preheat the oven to 180°C (350°F). Once the oven reaches the desired temperature, bake the Kunafa base until it turns golden brown, then remove it from the oven.
- While the Kunafa base is baking, mix the clotted cream with the ground pistachios in a separate bowl until well combined.
- Spread the cream mixture evenly over the baked Kunafa base.
- Take the second portion of the Kunafa dough (without butter) and layer it over the cream filling, covering the entire surface.
- Return the baking tray to the oven and bake again until the top layer of the Kunafa turns golden brown.
- Remove the Kunafa from the oven and cut it into your preferred sizes.
- While the Kunafa is still hot, pour the cooled syrup over it, or serve the syrup on the side, allowing each person to add their desired amount.
