Egyptian Stuffed Grape Leaves

 

  • 500 grams of fresh grape leaves.
  • 1 ½ cups of washed rice.
  • 1 cup of finely chopped parsley.
  • ¼ cup of finely chopped cilantro.
  • ½ cup of finely chopped mint.
  • 4 medium-sized tomatoes, diced into small cubes.
  • 4 green onions, chopped.
  • ½ cup of olive oil.
  • ¾ cup of freshly squeezed lemon juice.
  • 1 medium-sized potato, sliced.
  • Black pepper to taste.
  • Salt to taste.

Method of Preparation:

Step 1: Preparing the Grape Leaves

Soak the grape leaves in boiling water for 1 minute, then drain and set them aside.

Step 2: Preparing the Filling

In a large bowl, mix the rice with the chopped mint, parsley, lemon juice, black pepper, and salt. Stir well until the ingredients are fully combined, creating the stuffing.

Step 3: Stuffing the Grape Leaves

Lay a grape leaf flat and place 1 teaspoon of the stuffing in the center. Fold the sides of the leaf inward and roll it tightly. Repeat this process until all the grape leaves and stuffing are used.

Step 4: Arranging the Pot

Place the potato slices at the bottom of a large pot, then layer the stuffed grape leaves on top of the potatoes. Add enough water to cover the grape leaves.

Step 5: Cooking the Stuffed Grape Leaves

Place a ceramic plate over the grape leaves to hold them in place while cooking. Set the pot over low heat and allow the ingredients to cook until everything is tender and fully cooked.

Step 6: Serving
