Emirati Chicken Majboos – Recipe and Preparation Method
Majboos is a traditional dish in the Gulf region, with slight variations in preparation between countries. The Emirati Chicken Majboos is one of the most flavorful versions, known for its rich taste and high nutritional value. It’s easy to prepare, requiring about 75 minutes to cook. Ingredients for Emirati Chicken Majboos:
- 1 kilogram of chicken breasts, cut into pieces
- 2 cups of chopped onions
- 3 cloves of crushed garlic
- 1 teaspoon of ground ginger
- 2 cups of chopped tomatoes
- ½ cup of chopped cilantro
- 1 red bell pepper, cut into cubes
- 1 teaspoon of curry powder
- 1 teaspoon of ground cumin
- 1 teaspoon of turmeric
- 1 teaspoon of ground dried black lime (loomi)
- ½ teaspoon of ground cardamom
- ½ teaspoon of ground cinnamon
- ½ teaspoon of ground red chili
- 3 cups of chicken broth
- 1 green chili pepper, cut in half
- 1 whole dried black lime (loomi)
- 3 cups of water
- 2 cups of rice
Preparation Method for Emirati Chicken Majboos:
Cook the Chicken and Onions:
- In a large pot, add the chopped onions, chicken pieces, and a little oil. Cook the mixture, stirring occasionally, until the chicken changes color.
Add the Aromatics:
- Add the crushed garlic, ginger, cilantro, chopped tomatoes, and red bell pepper to the pot. Mix all the ingredients well and cook for about one minute until combined.
Add the Spices:
- Sprinkle in the curry powder, ground cumin, turmeric, ground cardamom, ground cinnamon, ground loomi, and red chili powder. Stir everything together until well mixed.
Simmer:
- Reduce the heat to low and let the mixture simmer for about 10 minutes, allowing the flavors to meld together.
Add Water and Chicken Broth:
- Add the whole dried black lime, green chili, and 3 cups of water. Bring the mixture to a boil, then lower the heat and let it cook for about 30 minutes.
Cook the Rice:
- Strain the chicken mixture, reserving the broth, and place the strained broth in another pot. Bring the broth to a boil, then add the rice and 3 cups of chicken broth. Stir everything together.
Final Cooking:
- Let the rice mixture cook for about 15 minutes until the rice and other ingredients are fully cooked and tender.
