Fish Madhrooba is a well-known traditional dish in the UAE, loved by both adults and children. The dish gets its name "Madhrooba" from the process of mashing the ingredients with a large wooden spoon after cooking, turning it into a soft, blended consistency.

This dish is highly nutritious, as it contains fish, a rich source of proteins, vitamins (such as A and C), calcium, sodium, potassium, iron, and omega-3 fatty acids. These nutrients make it a heart-healthy meal that supports brain development and reduces the risk of autoimmune diseases.

  • 1 Hamour fish (or any firm white fish)
  • 3 cups of Egyptian rice
  • 3 cloves of crushed garlic
  • 1 finely chopped onion
  • 3 peeled and chopped tomatoes
  • 2 tablespoons of tomato paste
  • Salt (to taste)
  • Black pepper (to taste)
  • 5 cardamom pods
  • 1 teaspoon of ground dried black lemon (loomi)
  • ½ teaspoon of ground cloves
  • ½ teaspoon of ground cinnamon
  • ¼ cup of chopped fresh cilantro
  • 1 teaspoon of ground coriander
  • 1 teaspoon of ground cumin
  • Boiling water (as needed)
  • 3 tablespoons of Arabic ghee (samin)
  • 2 beef or chicken bouillon cubes

Preparation Method for Emirati Fish Madhrooba:

  1. Preparing the Fish: Clean the fish well, remove the bones, and rub it with lemon and flour. Rinse thoroughly with water.

  2. Marinating the Fish: In a small bowl, mix the black lemon powder, cardamom, black pepper, salt, cumin, coriander, and cloves. Rub this mixture into the fish, making sure it's well coated.

  3. Cooking the Fish: Heat oil in a pan and fry the fish until fully cooked. Remove the skin and tail, and set the fish aside.

  4. Preparing the Sauce: In a separate pot, heat 2 tablespoons of ghee over medium heat. Sauté the crushed garlic and chopped onions until the onions soften and become translucent. Add the chopped tomatoes and cook until the mixture becomes soft and fully cooked.

  5. Cooking the Rice: Add 4 cups of boiling water to the pot, along with one bouillon cube. Rinse the rice thoroughly and add it to the pot. Add the chopped cilantro and bring the mixture to a boil.

  6. Combining the Fish and Rice: Cut the cooked fish into small pieces and add it to the rice mixture. Stir well, ensuring the fish is evenly distributed.

  7. Seasoning: Once the water begins to boil, season the dish with your preferred spices, adding the second bouillon cube and the tomato paste. Stir well, reduce the heat, and cover the pot. Let it cook on low heat for about 35 minutes.

  8. Mashing the Dish: Once the rice is fully cooked, remove the pot from the heat. Use a wooden spoon to mash the ingredients together, creating a soft, smooth consistency.

  9. Serving: Transfer the mashed mixture to a serving dish. Create a small well in the center of the dish. Heat the remaining 3 tablespoons of Arabic ghee and pour it into the well. Serve immediately, garnished with chopped fresh parsley, toasted pine nuts, or walnuts, if desired.

Fish Madhrooba is traditionally served with side dishes like salads or sliced cucumber and tomatoes. You can also garnish the dish with lemon slices for added flavor.
