  • 2 cups of all-purpose flour
  • ½ cup of ghee (clarified butter)
  • 1 tablespoon of ground cardamom
  • 1 teaspoon of saffron
  • 3 teaspoons of rose water
  • 1 ½ cups of white sugar
  • 2 cups of water (or as needed)
  • Cashews, pistachios, or almonds (optional, for garnish)
  • Shredded coconut (optional, for garnish)
  • Raisins (optional, for garnish)

Preparation Method for Emirati Khabisa:

  1. Prepare the Saffron and Rose Water Mixture:

    • In a small bowl, mix the saffron and rose water. Stir well and let it sit to allow the saffron to infuse.
  2. Prepare the Syrup:

    • In a pot over low heat, combine the sugar and water. Bring the mixture to a gentle boil, stirring occasionally until the sugar dissolves completely.
  3. Roast the Flour:

    • In a separate pot, heat the ghee over medium heat. Once hot, add the flour and stir continuously with a wooden spoon for 5 to 10 minutes, ensuring the flour turns golden brown without burning.
  4. Combine the Syrup with the Flour:

    • Gradually pour the sugar syrup into the roasted flour mixture while stirring continuously. If the mixture appears too thick, add more water as needed to achieve the desired consistency.
  5. Add Flavoring:

    • Remove the pot from the heat and stir in the ground cardamom and the saffron-rose water mixture. Mix all the ingredients thoroughly until well combined.
  6. Serve:

    • Pour the khabisa mixture into a serving dish. Garnish the top with cashews, pistachios, or almonds, and add shredded coconut and raisins as desired.
