Emirati Meat Stew – Recipe and Preparation Method

  • 2 cups of chopped onions
  • 3 cloves of mashed garlic
  • 1 teaspoon of ground ginger
  • 2 cups of chopped tomatoes
  • 1 bell pepper, chopped
  • ½ cup of chopped parsley
  • ¼ cup of vegetable oil
  • 1 kilogram of lamb with bone, cut into pieces
  • 1 tablespoon of curry powder
  • 1 teaspoon of ground cumin
  • 1 teaspoon of turmeric
  • 1 teaspoon of ground dried black lime (loomi)
  • ½ teaspoon of ground cardamom
  • ½ teaspoon of ground cinnamon
  • ¼ teaspoon of red chili powder
  • 2 chicken broth cubes
  • 2 whole red chili peppers, halved
  • 1 whole dried black lime (loomi)
  • ¼ cup of tomato paste
  • 4 ½ cups of water
  • 3 medium-sized potatoes, chopped into small pieces

Preparation Method for Emirati Meat Stew:

  1. Sauté the Onions:

    • Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and stir occasionally until they soften.
  2. Brown the Meat:

    • Add the lamb pieces to the pot and cover. Allow the meat to cook, turning occasionally, until browned on all sides.
  3. Add Aromatics:

    • Stir in the ginger and mashed garlic, mixing the ingredients well.
  4. Add Tomatoes and Spices:

    • Add the chopped tomatoes to the pot, then sprinkle in the ground loomi, curry powder, ground cardamom, cumin, red chili powder, and ground cinnamon. Stir the mixture occasionally until the tomatoes soften.
  5. Add Vegetables and Broth:

    • Stir in the chopped parsley and bell pepper. Add the tomato paste and water, mixing all the ingredients thoroughly.
  6. Season the Stew:

    • Add the whole dried black lime, halved red chili peppers, chicken broth cubes, and the chopped potatoes.
  7. Simmer:

    • Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer the stew for about 30 minutes, or until the meat is tender and the vegetables are cooked through.
