  • 1 ½ cups of yogurt
  • 2 tablespoons of tahini
  • 1 teaspoon of minced garlic
  • 2 medium-sized lemons, juiced
  • 1 tablespoon of finely chopped parsley
  • Vegetable oil (as needed for frying)
  • 2 medium-sized potatoes, diced into small cubes
  • 2 medium-sized eggplants, diced into small cubes
  • 2 medium-sized zucchinis, diced into small cubes
  • 2 pieces of Arabic bread, cut into squares
  • 2 medium-sized cucumbers, chopped
  • 2 green onions, chopped
  • 2 medium-sized carrots, diced into small cubes
  • 1 cup of cooked chickpeas
  • 1 cup of cooked beans (kidney beans or white beans)
  • 1 cup of canned corn

How to Prepare Fattet Al Maqali:

Step 1 – Prepare the Yogurt Sauce:
In a suitable bowl, combine the yogurt, lemon juice, and minced garlic. Mix all the ingredients well until they are fully combined. Add half of the chopped parsley and stir again until the mixture is homogeneous.

Step 2 – Fry the Vegetables:
Heat a generous amount of oil in a pan over medium heat. Fry the potato cubes until they are golden and cooked through. Remove and place them on paper towels to absorb the excess oil. Repeat the same process for the eggplant cubes, then for the zucchini cubes, and lastly for the bread squares, ensuring that each ingredient is placed on paper towels after frying.

Step 3 – Assemble the Dish:
Place the fried bread cubes at the bottom of a serving dish. Add the chopped cucumbers, green onions, and the remaining parsley on top of the bread. Then, layer the dish with the fried carrots, potatoes, eggplants, and zucchinis, followed by the cooked chickpeas, beans, and canned corn.

Step 4 – Finish the Dish:
Pour the yogurt sauce over the top of the assembled dish, making sure to cover it evenly.
