Main Ingredients for Preparing Fluffy Bulgur:

Fluffy Bulgur

  • 2 cups of coarse bulgur
  • ¼ cup of sunflower oil
  • 1 tablespoon of butter
  • 1 medium red bell pepper, diced into small cubes
  • 1 medium green bell pepper, diced into small cubes
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, finely minced
  • 2 tablespoons of tomato paste (optional but adds a distinct flavor)
  • 1 large tomato, peeled and finely chopped
  • 1 tablespoon of salt
  • ½ teaspoon of ground black pepper
  • 1 teaspoon of cumin
  • 1 teaspoon of turmeric

Salad Ingredients:

  • 2 large tomatoes, diced into small cubes
  • 1 medium white onion, finely chopped
  • ½ teaspoon of dried mint
  • ¼ cup of olive oil
  • 2 tablespoons of pomegranate molasses
  • ½ teaspoon of salt
  • ¼ teaspoon of ground black pepper

How to Prepare Fluffy Bulgur:

  1. Prepare the Bulgur: Begin by washing the bulgur and soaking it in water for about 7 minutes. Drain and set aside.

  2. Sauté the Vegetables: In a large pot, melt the butter with sunflower oil over medium heat. Once the butter has melted, add the minced garlic and chopped onion. Stir continuously until the onion turns a light golden color.

  3. Cook the Peppers: Add the diced red and green bell peppers to the pot and sauté them until they are well-cooked and slightly caramelized.

  4. Add Seasonings: Stir in the salt, black pepper, cumin, and turmeric, mixing everything well with a wooden spoon to combine the flavors.

  5. Cook the Bulgur: Add the bulgur to the pot and stir for about 2 minutes, allowing it to absorb the flavors of the other ingredients. Then, add the finely chopped tomatoes and tomato paste, stirring to combine. Pour in 3 cups of hot water, cover the pot, and let it simmer over low heat for about 15 minutes, or until the bulgur is fully cooked.

  6. Prepare the Salad: While the bulgur is cooking, prepare the salad. In a medium bowl, mix together the diced tomatoes, chopped onion, dried mint, pomegranate molasses, salt, pepper, and olive oil. Stir well to combine.

  7. Serve: Once the bulgur is cooked, transfer it to a serving dish and serve hot. Serve the prepared salad alongside the fluffy bulgur in a small dish.

Your fluffy bulgur and side salad are now ready to be served. Enjoy this healthy and delicious meal with your family or guests. Bon appétit!
