Whipped Cream Ingredients:

Dough Ingredients:

  • 320 grams of white sugar
  • 320 grams of butter
  • 450 grams of white flour

Filling Ingredients:

  • 4 white apples, cut into small cubes
  • 80 grams of white sugar
  • 35 grams of butter

Crème Pâtissière Ingredients:

  • 110 grams of cornstarch
  • 250 grams of white sugar
  • 1 liter of liquid milk
  • 3 small eggs

How to Prepare French Apple Tart:

  1. Prepare the whipped cream:

    • In a mixer, combine the European cream and powdered sugar. Whisk the mixture until it doubles in size. Place the whipped cream into a piping bag and refrigerate.
  2. Prepare the dough:

    • In a mixer, whisk the egg yolks and sugar until the mixture becomes light in color.
    • Add the butter and flour, and mix until you achieve a smooth and cohesive dough.
    • Roll out the dough on a floured surface and cut it into a round shape. Place the dough in a greased baking pan.
    • Preheat the oven to 160°C (320°F). Once heated, bake the dough for 20 minutes.
  3. Prepare the apple filling:

    • In a saucepan, melt the sugar over medium heat, stirring occasionally until it turns into caramel.
    • Add the butter and stir until it melts and combines with the caramel.
    • Add the diced apples and cook them until they soften and blend with the caramel. Remove from heat and pour the mixture into a round mold slightly smaller than the baking pan containing the dough.
  4. Prepare the crème pâtissière:

    • In a bowl, mix the cornstarch and sugar. Add the eggs and whisk until combined.
    • Heat the milk in a saucepan over medium heat until warm, then add the egg mixture, stirring rapidly to create a smooth cream. Remove from heat and allow the mixture to cool. Place the crème pâtissière in a piping bag.
  5. Assemble the tart:

    • Place the baked dough on a serving plate. Pipe a layer of crème pâtissière in the center of the dough.
    • Spread the apple mixture on top of the cream. Decorate the edges of the tart with caramel and the European whipped cream.
