How to Prepare French Choux Pastry:
Prepare the Dough:
In a pot, combine the butter and water over medium heat until it boils. Reduce the heat to low and gradually add the flour, stirring constantly until the mixture forms a dough ball.
Remove the pot from heat, and gradually add the eggs one by one, mixing well after each addition. Continue mixing until you have a smooth, firm dough.
Line a baking tray with parchment paper.
Using a large spoon, place small amounts of dough onto the tray, leaving space between each piece.
Preheat the oven to 200°C (390°F). Once heated, bake the dough for about 30 minutes until golden and fully cooked. Remove from the oven and let them cool.
Prepare the Filling:
In a saucepan, mix the salt, sugar, and flour together until well combined.
Gradually add the milk while stirring and heat the mixture over medium heat until it begins to boil. Continue stirring for an additional 2 minutes, then remove from heat.
In a bowl, whisk the egg yolks and gradually add half of the hot milk mixture to the yolks, stirring constantly to combine.
Pour the yolk mixture back into the remaining milk mixture in the saucepan and return to the heat, stirring until it begins to boil. Add the vanilla and stir until everything is well combined.
Once the filling is ready, remove it from the heat and allow it to cool.
Assemble the Choux Pastries:
Cut the baked choux pastry in half horizontally.
Fill the bottom half of the pastry with one tablespoon of the cooled filling mixture.
Add a dollop of whipped cream on top of the filling, then place the top half of the pastry back on.
