Ingredients for French Macarons:
For the Macarons:
- 1 egg white.
- 75 grams of white sugar.
- 50 grams of ground almonds.
- 25 grams of powdered sugar.
- 5 drops of red food coloring.
- 5 drops of purple food coloring.
For the Filling:
- 50 grams of powdered sugar.
- 25 grams of ground almonds.
- 1 tablespoon of strawberry jam.
- 1 tablespoon of raspberry jam.
Method of Preparation:
Step 1: Preparing the Macarons
In a food processor, blend the ground almonds and powdered sugar together until they are well combined.
In a separate bowl, whisk the egg white and white sugar using an electric mixer until the mixture becomes smooth and glossy.
Gradually fold the almond-sugar mixture into the egg mixture and stir gently until the batter is well combined and smooth.
Divide the batter into two portions. Add the red food coloring to one portion and the purple food coloring to the other. Mix each portion well with its respective coloring.
Line a baking tray with parchment paper.
Using a piping bag, form small circles of the red and purple batter on the tray. Let them rest for about 15 minutes.
Preheat the oven to 140°C (285°F). Once heated, lightly sprinkle a few drops of water on the parchment paper (this will help remove the macarons easily later), then place the tray in the oven and bake for about 10 minutes.
Step 2: Preparing the Filling
In a food processor, mix the ground almonds and powdered sugar. Divide the mixture into two portions.
Mix one portion with the raspberry jam and the other portion with the strawberry jam.
Step 3: Assembling the Macarons
Spread the raspberry jam filling on half of the macarons and the strawberry jam filling on the other half. Place another macaron of the same color on top to form a sandwich.
