Ingredients for Fried Aleppo Kibbeh:
Kibbeh Dough Ingredients:
- 500 grams of minced meat
- 250 grams of fine bulgur
- 1 medium-sized onion, quartered
- 1 teaspoon of cumin
- 1 teaspoon of black pepper
- 1 teaspoon of salt
Filling Ingredients:
- 250 grams of minced meat
- ¼ cup of crushed roasted pistachios
- 1 medium-sized onion, finely chopped
- 2 tablespoons of olive oil
- 1 teaspoon of ground cinnamon
- ½ teaspoon of black pepper
- 1 teaspoon of salt
- A generous amount of vegetable oil for frying (as needed)
How to Prepare Fried Aleppo Kibbeh:
Preparing the Kibbeh Dough:
- Soak the fine bulgur in water for at least 30 minutes until it softens.
- In a food processor, combine the soaked bulgur, minced meat, onion, salt, cumin, and black pepper. Blend until you achieve a smooth and cohesive dough.
Preparing the Filling:
- In a pan, heat the olive oil over medium heat. Add the chopped onion and sauté until soft.
- Add the minced meat, black pepper, salt, and ground cinnamon. Stir occasionally until the meat is fully cooked.
- Remove the pan from the heat and mix in the crushed roasted pistachios. Let the filling cool slightly.
Shaping the Kibbeh:
- Divide the kibbeh dough into medium-sized balls.
- Take one ball of dough and use your finger to make a hole in the center. Stuff it with a spoonful of the prepared filling and seal the dough around it.
- Repeat the process until all the kibbeh dough and filling are used.
Frying the Kibbeh:
- In a large pan, heat a generous amount of vegetable oil over medium heat until hot.
- Fry the kibbeh in batches, turning them occasionally, until they are golden and cooked through on all sides.
- Remove the fried kibbeh from the oil and place them on paper towels to absorb excess oil.
