Grilled Chicken Fillet – Recipe and Preparation

Grilled chicken fillet is one of the healthiest meals, favored by athletes, people on diets, and even those with diabetes or cholesterol concerns. It’s easy to prepare, requiring only 15 minutes, and can be grilled over charcoal or on a gas grill at home. This delicious and affordable meal serves 4 people.

Ingredients for Grilled Chicken Fillet:

  • 4 chicken fillet pieces
  • ½ cup of labneh (strained yogurt)
  • ¼ cup of fresh lemon juice
  • 1 teaspoon of grated lemon zest
  • ¼ cup of olive oil
  • 3 cloves of garlic, finely minced
  • 1 teaspoon of dried mint
  • 1 teaspoon of oregano
  • 1 large onion, cut into moderate-sized slices
  • 1 medium red bell pepper, cut into even slices
  • 1 medium yellow bell pepper, cut into even slices
  • 1 medium green bell pepper, cut into even slices
  • 6 mushrooms, sliced

Preparation Steps:

  1. Prepare the Chicken:

    • Place a piece of parchment paper on a flat surface and spray it lightly with oil. Put the chicken fillets on top. Cover the chicken with another sheet of oiled parchment paper.
    • Using a kitchen mallet, gently pound the chicken fillets until they become thinner and more tender.
  2. Prepare the Marinade:

    • In a deep bowl, mix the labneh, lemon zest, olive oil, garlic, dried mint, and oregano. Stir the ingredients until a smooth mixture is formed.
    • Remove the chicken from the parchment paper and place it into the marinade, ensuring it’s well coated. Let the chicken marinate for 15 minutes.
  3. Prepare the Grill:

    • Preheat a griddle or thick-bottomed pan over high heat (if using a grill pan, heat until it’s very hot).
    • Brush the griddle with olive oil and add the onion slices, bell peppers (red, yellow, and green), and mushroom slices.
    • Sauté the vegetables, stirring them occasionally, until they turn golden brown. Remove them from the griddle and place them on a serving plate, keeping them warm.
  4. Grill the Chicken:

    • Place the marinated chicken fillets on the griddle and grill for about 5 minutes on one side, or until the bottom turns golden brown.
    • Use kitchen tongs to flip the chicken fillets and grill the other side. Keep flipping the fillets back and forth every few minutes until fully cooked and tender.
  5. Serve:

    • Once the chicken is fully grilled, transfer the fillets to the serving plate along with the sautéed vegetables.
    • Serve the grilled chicken fillets hot, alongside the vegetables, for a tasty and nutritious meal.
