Grilled kofta is one of the most famous dishes in Arab cuisine. It is loved by both adults and children due to its delicious taste and simplicity. The main ingredient is finely minced meat, and it's easy and quick to prepare. This recipe serves six people.
Main Ingredients for Grilled Kofta:
For the Kofta:
- 500 grams finely minced meat
- 1 large onion, finely chopped
- ½ large tomato, finely chopped
- ½ bunch of parsley, finely chopped
- ¼ bunch of dill, finely chopped
- ½ medium green bell pepper, finely chopped
- 1 tablespoon mixed spices
- ¼ teaspoon ground black pepper
- ½ teaspoon chili powder
- 1 tablespoon dried coriander
For the Tahini Sauce:
- ½ cup tahini
- ½ cup sour yogurt
- 2 tablespoons freshly squeezed lemon juice
- ¼ cup lukewarm water
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
For Serving:
- Zest of ½ lemon
- 1 piece of charcoal
- Small Arabic bread
How to Prepare Grilled Kofta:
Prepare the Kofta Mixture: After mincing the meat, place it in a blender along with the chopped onion, tomato, parsley, dill, bell pepper, mixed spices, black pepper, and chili powder. Blend on medium speed for about 2 minutes until the mixture becomes smooth and well combined.
Chill the Kofta: Transfer the kofta mixture to a clean dish, cover with plastic wrap, and refrigerate for 15 minutes to allow the meat to firm up.
Shape the Kofta: Wet your hands with cold water to prevent sticking, then shape the kofta mixture into sausage-like shapes and place them on wooden skewers.
Grill the Kofta: Preheat an electric grill and place the skewered kofta on it. Grill for a few minutes on one side, then flip to cook the other side. Continue turning the skewers until the kofta is cooked through and golden brown.
Infuse with Smoky Flavor: While the kofta is grilling, heat a piece of charcoal over high heat until it turns red hot. Place the hot coal inside the zest of half a lemon and put it on the grill next to the kofta skewers. Drizzle a little oil over the coal, cover the grill, and allow the kofta to absorb the smoky aroma for a few minutes. Then, remove the lemon and coal and keep the kofta warm until serving.
Prepare the Tahini Sauce: In a deep bowl, whisk together the tahini, sour yogurt, lemon juice, water, black pepper, and salt using a hand whisk until smooth.
Serve the Kofta: To serve, cut the Arabic bread in half, add some lettuce and cabbage, and place one kofta skewer inside. Drizzle with a tablespoon of tahini sauce and serve immediately while hot, accompanied by additional tahini sauce on the side.
