For the Dough:

  • 2 cups of all-purpose flour
  • 100 grams of room-temperature butter
  • ¼ teaspoon of salt
  • 1 teaspoon of baking powder
  • ¼ cup of liquid milk
  • ¼ cup of vegetable oil

For the Filling:

  • ½ cup of powdered milk
  • ½ cup of powdered sugar
  • ½ cup of tahini (sesame paste)
  • 1 teaspoon of rose water
  • ½ cup of pistachios

For Garnishing:

  • Powdered sugar (as desired)
  • Ground pistachios (as desired)

Steps for Preparing Halawa Tahini Maamoul:

Preparing the Dough:

  1. In a deep bowl, combine the flour, room-temperature butter, baking powder, salt, vegetable oil, and liquid milk.
  2. Mix the ingredients well and knead with your hands until the dough becomes firm and well-combined.
  3. Cover the dough with a cloth and set it aside to rest for 30 minutes.

Preparing the Filling:

  1. In a separate bowl, mix together the powdered milk, powdered sugar, rose water, and tahini.
  2. Add the pistachios to the mixture and continue mixing until all ingredients are well-blended.

Assembling the Maamoul:

  1. Divide the dough into small circles.
  2. Take one dough circle and gently create an indentation in the center. Fill it with a portion of the prepared filling, then shape it back into a small ball.
  3. Place the stuffed dough ball into a silicone cake mold to shape it into the traditional maamoul form.
  4. Repeat the process until all dough and filling are used.

Baking:

  1. Preheat the oven to 180°C (356°F).
  2. Once the oven is heated, place the silicone mold in the oven and bake for about 10 minutes, or until lightly golden.
  3. Remove the mold from the oven, transfer the maamoul to a serving plate, and garnish with powdered sugar and ground pistachios.
