Harraq Osba'o is a traditional dish of Levantine origin, known for its delicious taste and numerous health benefits due to its high nutritional value. It is often served during the winter, making it somewhat of a seasonal meal. Additionally, it is an old, popular dish that is easy to prepare and doesn't require much time or effort.
Main Ingredients for Preparing Harraq Osba'o:
- 1 cup of brown lentils
- 4 cups of lukewarm water
- 1 teaspoon of ground cumin
- 300 grams of wide strip pasta
- ½ teaspoon of sumac
- ½ cup of freshly squeezed lemon juice
- ¼ teaspoon of salt (can be adjusted to taste)
- 1 teaspoon of pomegranate molasses
- 3 medium-sized onions
- 3 garlic cloves, finely crushed
- 2 tablespoons of finely chopped fresh cilantro
- 1 loaf of bread, cut into small cubes
How to Prepare Harraq Osba'o:
First, take a deep pot and place the lentils, water, and ground cumin inside. Bring the mixture to a boil over medium heat. Once it reaches a boil, cover the pot and lower the heat, letting it simmer for about 60 minutes until the lentils are fully cooked.
In a separate pot, cook the pasta in boiling water over medium heat until it is half-cooked. You don't need to cook it completely at this stage.
Drain the pasta and return it to the pot. Add the cooked lentils to the pasta and stir them together using a wide plastic spoon. Let them cook over low heat until the pasta is fully done.
Next, add the lemon juice, sumac, salt, pomegranate molasses, and garlic to the pot. Stir everything together to ensure all the ingredients are well combined, and let it cook for a few more minutes on low heat.
Meanwhile, slice the onions thinly and fry them. Heat oil in a wide, heavy-bottomed pan over medium heat. Once the oil is hot, add the onion slices, being careful not to burn them. Fry until they are golden brown. Fry the bread cubes in the same way until they are crispy and golden.
Finally, pour the Harraq Osba'o into a serving dish and garnish it with the chopped cilantro. Add the crispy fried bread and golden onions on top. You can also sprinkle a few pomegranate seeds over the dish to enhance its flavor.
