Ingredients for Hassawi Kabsa:
- 2 tablespoons of vegetable oil.
- 1 kilogram of lamb, cut into cubes.
- 4 medium-sized potatoes, cut into cubes.
- 3 cups of rice.

- 3 medium-sized tomatoes, finely chopped.
- 3 cloves of minced garlic.
- 1/4 cup of chopped parsley.
- 1 medium-sized carrot, sliced.
- 2 hot peppers, sliced.
- 1 tablespoon of tomato paste.
- 1 whole dried lime (lumi).
- 1 whole clove.
- 1/2 teaspoon of cumin.
- 1/4 teaspoon of mixed spices.
- 1/4 teaspoon of garlic powder.
- 1/4 teaspoon of black pepper.
- 1/4 teaspoon of turmeric.
- 1/4 teaspoon of paprika.
- 1/2 teaspoon of salt.
Steps to Prepare Hassawi Kabsa:
Sauté the onions: Heat the vegetable oil in a pressure cooker over medium heat. Once the oil is hot, add the chopped onions and stir occasionally until softened.
Add the spices and vegetables: Add the minced garlic, clove, lumi, chopped tomatoes, tomato paste, sliced hot peppers, parsley, sliced carrots, mixed spices, turmeric, garlic powder, salt, and paprika. Stir well until the ingredients are combined.
Add the meat and potatoes: Add the potato cubes and lamb pieces to the mixture and stir again until everything is well incorporated.
