For the Chicken:
- 3 whole chicken thighs.
- Salt (to taste).
- ½ teaspoon of white pepper.
- 2 cinnamon sticks.
- 1 medium onion.
- 3 cardamom pods.
- 2 bay leaves.
- ½ teaspoon of black pepper.
- ¼ teaspoon of grated ginger.
- 3 tablespoons of tomato paste.
For the Rice:
- 1 cup of Egyptian rice (washed and drained).
- 1 cup of American rice (washed and drained).
- 3 cups of liquid milk.
- 2 tablespoons of butter.
- 1 tablespoon of vegetable oil.
- 4 ground mastic grains.
How to Prepare Hejazi Saliq with Chicken:
For the Chicken:
In a pressure cooker, place the chicken thighs along with cardamom, salt, cinnamon sticks, onion, and bay leaves. Cover with water.
Bring the pressure cooker to medium heat. Once it begins to boil, seal the cooker and let it cook for about 20 minutes until the chicken is fully cooked.
Remove the chicken thighs and place them in another bowl. Add salt, white pepper, tomato paste, black pepper, and ginger. Mix well until the chicken is evenly coated.
Preheat the oven to 200°C (390°F). Place the chicken in a baking dish and roast in the oven for about 15 minutes until the chicken turns golden and crispy.

Pour the butter and mastic mixture over the rice and milk. Stir everything together until fully combined.
