  • 1 tablespoon of yeast
  • 2 tablespoons of white sugar
  • 2 tablespoons of powdered milk
  • 1 tablespoon of baking powder
  • ½ cup of water
  • ¼ cup of vegetable oil
  • 170 grams of yogurt
  • 3½ cups of white flour

For the Filling:

  • 2 cups of feta cheese
  • 1 cup of shredded mozzarella cheese
  • 1 cup of chopped parsley

For the Topping:

  • 1 egg, beaten
  • Sesame seeds (as desired)
  • Nigella seeds (as desired)

How to Prepare Helix Cheese Pastry:

  1. Prepare the Dough:

    • In a bowl, combine the sugar, yeast, baking powder, powdered milk, and water. Whisk the ingredients together by hand until well combined.
    • Add the yogurt and vegetable oil, and continue whisking until the mixture is smooth.
    • Gradually add the white flour and knead by hand until you get a smooth, firm dough.
    • Cover the dough and let it rest for 60 minutes.
  2. Prepare the Filling:

    • Crumble the feta cheese in a bowl. Add the shredded mozzarella and chopped parsley. Mix everything together until well combined.
  3. Assemble the Pastries:

    • Roll out the dough into a rectangular shape on a floured surface.
    • Cut the dough into strips.
    • Place a portion of the cheese filling along each strip of dough, then roll each strip into a cylindrical shape.
    • Twist each roll into a spiral (helix) shape and place them on a greased baking tray.
  4. Bake the Pastries:

    • Brush the tops of the dough spirals with the beaten egg.
    • Sprinkle sesame seeds and nigella seeds on top as desired.
    • Preheat the oven to 200°C. Once heated, place the tray in the oven and bake the pastries for about 15 minutes, or until the dough turns golden and fully cooked.
