For the Rice:

  • 1 ½ cups of rice
  • 7 cups of drinking water
  • 1 teaspoon of salt
  • 1 teaspoon of vegetable oil
  • 3 cinnamon sticks
  • 6 whole cloves
  • 6 cardamom pods
  • 1 bay leaf
  • 1 star anise

For the Chicken:

  • 500 grams of chicken thighs
  • ½ teaspoon of garam masala
  • 1 large onion, finely chopped
  • ¼ cup of fresh coriander
  • ¼ cup of fresh mint leaves
  • ¼ cup of vegetable oil
  • 2 tablespoons of ghee (clarified butter)
  • ¼ teaspoon of saffron dissolved in 1 tablespoon of liquid milk

For the Marinade:

  • ¼ cup of vegetable oil
  • 3 teaspoons of ginger-garlic paste
  • ¼ teaspoon of turmeric
  • 1 green chili pepper, finely chopped
  • ⅔ cup of yogurt
  • 1 tablespoon of lemon juice
  • 1 teaspoon of paprika
  • 2 teaspoons of garam masala
  • ½ teaspoon of ground cardamom
  • 1 teaspoon of salt

How to Prepare Hyderabadi Chicken Biryani:

  1. Prepare the onions:
    Heat vegetable oil in a pan over medium heat, then add the finely chopped onion. Stir occasionally until golden brown, then remove and drain on paper towels.

  2. Prepare the marinade:
    In a large bowl, mix the vegetable oil, lemon juice, yogurt, turmeric, salt, cardamom, garam masala, paprika, ginger-garlic paste, and chopped green chili. Stir well until all ingredients are combined.

  3. Marinate the chicken:
    Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 10 hours.

  4. Prepare the rice:
    Wash the rice thoroughly with water until the water runs clear. In a large pot, bring the drinking water to a boil. Add the vegetable oil, salt, cloves, cinnamon, cardamom, star anise, and bay leaf. Add the rice, reduce the heat to low, cover the pot, and cook until the rice is done.

  5. Cook the chicken:
    In an oven-safe dish, add the marinated chicken along with half of the fried onions, coriander, and mint leaves. Stir gently to combine all ingredients.

  6. Layer the rice:
    Add the cooked rice on top of the chicken, followed by the remaining fried onions, ghee, saffron mixture, and the remaining coriander and mint leaves.

  7. Baking the biryani:
    Cover the dish with aluminum foil and place a clay dish on top for added pressure. Preheat the oven to 180°C (356°F). Once preheated, bake the biryani for 40 minutes.

  8. Serve the biryani:
    After baking, remove the dish from the oven, carefully remove the foil, and serve the Hyderabadi Chicken Biryani hot.
