  • 3 medium-sized eggplants, sliced
  • 3 medium-sized green bell peppers, finely chopped
  • 1 large tomato, finely chopped
  • 2 medium-sized onions, finely chopped
  • 1 tablespoon of tomato paste
  • 1 tablespoon of hot red pepper
  • 5 cloves of crushed garlic
  • ¼ teaspoon of white sugar
  • ¼ teaspoon of paprika
  • Salt to taste
  • Black pepper to taste
  • ½ cup of olive oil

How to Prepare Imam Bayildi:

  1. Place the eggplant slices in a large bowl, submerge them in salted water using coarse salt, and let them soak for at least 30 minutes. Afterward, drain the eggplant slices from the salted water.

  2. Heat a portion of the olive oil in a pan over medium heat. Add the chopped onions and sauté them, stirring occasionally, until softened.

  3. Season the onions with salt and black pepper, then stir the mixture occasionally for about 5 minutes.

  4. Add the chopped green bell peppers and crushed garlic to the pan. Stir and cook for another 4 minutes.

  5. Stir in the hot red pepper, tomato paste, and paprika, mixing everything well until the ingredients are fully combined.

  6. Add the white sugar, chopped tomatoes, drained eggplants, and 2 cups of water to the pan.

  7. Bring the mixture to a boil, then reduce the heat to low, cover the pan, and let it simmer for about 30 minutes, or until all the ingredients are cooked through.

  8. Once done, drizzle the remaining olive oil over the top of the dish.

  9. Remove the pan from heat and transfer the mixture to a serving dish.
