- 1 cup of yogurt
- 2 medium-sized lemons, one squeezed
- 1 teaspoon of ground cumin
- 1 teaspoon of ground ginger
- ½ teaspoon of turmeric
- ¼ teaspoon of ground hot red pepper
- 4 crushed garlic cloves
- ¼ cup of fresh cilantro, finely chopped
- Salt to taste
- Black pepper to taste
- 8 medium-sized chicken thighs, boneless and skinless
- 1 small onion, finely chopped
- ¼ cup of olive oil
How to Prepare Indian Grilled Chicken Thighs:
Prepare the Marinade: In a suitable bowl, mix the yogurt, cumin, lemon juice, turmeric, ginger, cilantro, hot red pepper, black pepper, salt, and crushed garlic together until well combined.
Marinate the Chicken: Pour the marinade into a large resealable plastic bag. Place the chicken thighs inside, seal the bag, and use your hands to gently massage the marinade into the chicken, ensuring it’s well coated. Place the bag in the refrigerator for at least two hours to let the chicken absorb the flavors.
