Ingredients for Indian Luqaimat:
- 1 ½ cups of liquid milk.
- 1 cup of white flour.
- 3 cups of white sugar.
- 1 cup of drinking water.
- 2 teaspoons of baking soda (bicarbonate of soda).
- 1 teaspoon of ground cardamom.
- 1 teaspoon of saffron.
- 1 tablespoon of rose water.
- ½ cup of cold syrup (qater).
- Vegetable oil for frying (as needed).
Preparation of Indian Luqaimat:
In a suitable pot over low heat, combine the drinking water and white sugar. Stir the mixture until the sugar dissolves completely.
Add the ground cardamom and rose water to the mixture.
In a separate bowl, pour the liquid milk, then add the sugar-water mixture. Stir in the baking soda, white flour, and saffron.
Gradually add a little more drinking water to the mixture while stirring until a smooth dough forms.
Shape the dough into small balls, each about the size of a walnut. Continue shaping until all the dough is used.
Heat a generous amount of vegetable oil in a suitable pot over medium heat.
Once the oil is hot, fry the dough balls until they turn golden brown.
Remove the fried dough balls from the hot oil and place them on paper towels to drain the excess oil. While still hot, dip the fried dough balls into the cold syrup (qater).
Remove the Luqaimat from the syrup and place them on a serving plate.
Your Indian-style Luqaimat is now ready! Serve them to your family or guests and enjoy their delightful taste. Bon appétit!
