  • 1 ½ cups of rice, washed and soaked in cold water for 60 minutes.
  • ¾ cup of green lentils, washed.
  • 2 tablespoons of olive oil.
  • A small amount of saffron soaked in ¼ cup of hot water.
  • 1 medium-sized onion, finely chopped.
  • ¼ cup of raisins.
  • Salt to taste.
  • Black pepper to taste.
  • ¼ teaspoon of cumin.
  • ½ teaspoon of turmeric.
  • ½ teaspoon of ground cinnamon.

How to Prepare Iranian Adas Polo:

  1. Cooking the Rice:

    • In a suitable pot over medium heat, add the washed and drained rice.
    • Cover the rice with enough water and add some salt.
    • Cover the pot and, once the water boils, reduce the heat and let the rice cook until it's fully done. Set the pot aside.
  2. Cooking the Lentils:

    • In another pot over medium heat, add the soaked lentils and cover them with water.
    • Add a bit of salt, stir gently, and reduce the heat once it starts boiling.
    • Let the lentils simmer until fully cooked, then set aside.
  3. Sautéing the Onions and Mixing the Lentils:

    • Heat 1 tablespoon of olive oil in a suitable pan over medium heat.
    • Add the finely chopped onion and sauté, stirring occasionally until it softens.
    • Add the cooked lentils, raisins, black pepper, salt, cumin, cinnamon, and turmeric. Stir everything well until fully combined. Remove from heat.
  4. Layering the Rice and Lentils:

    • In a separate pot, heat the remaining tablespoon of olive oil over low heat.
    • Add a layer of the cooked rice, followed by a layer of the lentil mixture.
    • Continue layering rice and lentils alternately until all ingredients are used.
  5. Adding the Saffron:

    • Pour the saffron water over the rice and lentil mixture, then cover the pot.
    • Let the dish steam over low heat for about 30 minutes.
  6. Serving:

    • Once done, remove the pot from the heat and transfer the Adas Polo to a serving dish.
