Iranian Kabsa is known for its rich nutritional value and delicious taste. It is moderately difficult to prepare, requiring about 100 minutes for preparation and cooking. Ingredients for Iranian Kabsa:
For the Chicken:
- 1 whole chicken.
- 1 tablespoon of vegetable oil.
- ¼ teaspoon of white pepper.
- Salt to taste.
- ¼ teaspoon of turmeric.
- ¼ teaspoon of ground ginger.
- ¼ teaspoon of saffron.
- ¼ teaspoon of ground cardamom.
- 1 medium-sized carrot, peeled and sliced.
- 1 medium onion, coarsely chopped.
- 1 small green chili, sliced.
- 3 cloves of garlic.
- ¾ cup of boiling water.
For the Rice:
- 500 grams of soaked and drained rice.
- 2 liters of water.
- 2 tablespoons of powdered milk.
- 2 bay leaves.
- 1 tablespoon of vegetable oil.
- 1 medium onion, finely chopped.
- 3 cloves of garlic, finely minced.
- ¼ teaspoon of saffron.
For Garnishing:
- 1 small red onion, sliced.
- 1 lemon, sliced.
- 2 tablespoons of finely chopped parsley.
Method of Preparation:
Step 1: Preparing the Chicken
In a small bowl, mix the saffron, white pepper, ground cardamom, and ginger together to create a spice blend.
Rub the chicken with salt and the spice blend, ensuring it’s well coated on all sides.
Grease a baking tray with vegetable oil, and spread the chili, onion, garlic, and carrot slices at the bottom of the tray. Place the spiced chicken on top and pour the boiling water into the tray.
Preheat the oven to 180°C (350°F). Once the oven reaches the desired temperature, place the tray inside and bake the chicken until it’s fully cooked and golden.
Step 2: Preparing the Rice
In a bowl, mix ⅔ cup of water with saffron and set aside.
In a large pot, bring the remaining water to a boil over medium heat. Add the bay leaves and powdered milk, stirring until the milk dissolves.
Once the water is boiling, add the soaked and drained rice. Let the rice cook for about 12 minutes or until it’s tender.
In another pot, heat vegetable oil over medium heat. Add the chopped onion and minced garlic, stirring until the onion becomes soft and translucent.
Once the rice is cooked, drain it and add it to the pot with the onion and garlic. Pour the saffron mixture over the rice and stir well to combine. Let the rice cook on low heat for another 20 minutes.
Step 3: Serving the Kabsa
Remove the chicken from the oven and place it in a serving dish. Cover the chicken with the saffron-infused rice.
Garnish the dish with sliced red onion, lemon slices, and chopped parsley.
