Sabzi stew, also known as "Ghormeh Sabzi," is one of the most popular traditional dishes in Iranian cuisine. Ingredients for Sabzi Stew:

  • 500 grams of lamb shank, cut into cubes.
  • 1 medium-sized onion, finely chopped.
  • 2 tablespoons of oil.
  • 1 teaspoon of turmeric.
  • 1 ½ cups of water.
  • 4 dried limes (lumi).
  • ¾ cup of canned red kidney beans.
  • 1 ½ cups of finely chopped spinach.
  • ¼ cup of finely chopped cilantro.
  • Salt to taste.
  • Black pepper to taste.

How to Prepare Sabzi Stew:

  1. Sautéing the Onions and Lamb:

    • Heat half of the oil in a suitable pot over medium heat.
    • Add the chopped onion and sauté, stirring occasionally, until the onions soften.
    • Add the turmeric and continue stirring for two minutes.
    • Increase the heat slightly and add the lamb cubes. Stir occasionally until the lamb changes color.
  2. Simmering the Stew:

    • Reduce the heat to medium, and add water, kidney beans, black pepper, and salt to the pot.
    • Once the mixture starts boiling, cover the pot, and reduce the heat to low. Let it simmer until the lamb becomes tender.
  3. Adding the Greens and Dried Limes:

    • Add the chopped parsley, spinach, dried limes (lumi), and cilantro to the pot.
    • Stir gently to ensure all the ingredients are well combined.
  4. Final Cooking:

    • Cover the pot again and let the stew cook on low heat for another 20 minutes until all the flavors blend and the ingredients are fully cooked.
  5. Serving:

    • Remove the pot from the heat and transfer the stew to a serving dish.
