Ingredients for Iraqi Quzi with Meat:
- Half a leg of lamb.
- 1 large onion, sliced.
- 4 cloves of finely minced garlic.
- 3 teaspoons of meat spices.
- 3 cups of rice.
- 1 teaspoon of saffron, soaked in 2 tablespoons of water.
- Half a teaspoon of whole cloves.
- 4 whole cardamom pods.
- 4 cinnamon sticks.
- 2 bay leaves.
- 2 teaspoons of salt.
- Half a teaspoon of black pepper.
- Half a cup of ghee.
For the stuffing:
- 4 large onions, finely chopped.
- 1 teaspoon of ground dried lime (loomi).
- 1 teaspoon of ground cinnamon.
- Quarter teaspoon of ground cardamom.
- 1 teaspoon of salt.
- Quarter teaspoon of white pepper.
- Half a cup of raisins.
- 1 cup of cooked lentils.
- 1 cup of crushed almonds.
- 1 tablespoon of vegetable oil.
- 3 cups of cooked lentils.
- 2 cups of fried vermicelli.
For garnish:
- 4 boiled eggs, sliced.
- 2 lemons, halved.
- 2 tomatoes, halved.
How to Prepare Iraqi Quzi with Meat:
Heat a suitable amount of ghee in a pot over medium heat until melted, then add the garlic and onions, stirring occasionally until softened.
Add the lamb and stir occasionally until the meat changes color on all sides.
Add the cardamom, cloves, bay leaves, cinnamon, black pepper, salt, and meat spices. Then cover the ingredients with hot water, leaving it to cook until the lamb is tender.
In another pot, add a quarter cup of water over medium heat, then add the onions, stirring occasionally until softened.
Add the raisins, lentils, loomi, cardamom, cinnamon, white pepper, and salt. Stir all ingredients until well combined.
Add the oil and crushed almonds, then remove the pot from heat.
Remove the lamb and all the whole spices from the pot, and set the broth aside to use for the rice.
In a separate pot, heat some ghee over medium heat, then add the lamb and stir until it turns golden on all sides.
In another pot, melt a tablespoon of ghee over medium heat, then add the rice and stir until well combined with the ghee.
Add 6 cups of the lamb broth and let the mixture boil. Once boiling, cover the pot and leave the rice to cook thoroughly.
Take half of the cooked rice and mix it with the soaked saffron to give it a yellow color.
Arrange the rice on a serving dish, top with the vermicelli and lentil mixture, and distribute the lamb on top.
Garnish the dish with boiled eggs, lemon halves, and tomato halves.
