Joojeh Kebab is one of the most delicious dishes in Iranian cuisine, loved by everyone in the family regardless of age. The dish is easy to prepare, requiring just 10 minutes of preparation and 30 minutes to cook. It can be made occasionally for a delightful family meal. Ingredients for Iranian Joojeh Kebab:
- 1 kilogram of ground lamb.
- 2 eggs.
- 2 medium onions, grated.
- 3 cloves of garlic, minced.
- 6 small tomatoes.
- Black pepper to taste.
- Salt to taste.
Method of Preparation:
Step 1: Preparing the Meat Mixture
In a small bowl, beat the eggs until they are well blended.
In a large mixing bowl, combine the ground lamb, beaten eggs, minced garlic, grated onions, black pepper, and salt. Mix all the ingredients thoroughly until well combined.
Cover the bowl with plastic wrap and refrigerate for at least two hours to allow the flavors to blend.
Step 2: Shaping the Kebab
After the meat has marinated, take portions of the mixture and form medium-sized balls. Shape each portion around a wooden skewer, pressing the meat into a long, finger-like shape.
Repeat this process until all the meat mixture is used.
Step 3: Preparing the Tomatoes
Thread the small tomatoes onto separate wooden skewers.
Step 4: Cooking the Kebab
Place the skewers of kebabs and tomatoes onto baking trays suitable for the oven.
Preheat the oven to 250°C (480°F). Once the oven reaches the desired temperature, place the trays inside and let the kebabs and tomatoes cook for about 30 minutes or until the lamb is fully cooked.
Step 5: Serving
Once cooked, remove the trays from the oven. Carefully slide the kebabs and tomatoes off the skewers and place them on serving plates.
