Jordanian Makmoura is a traditional dish in Jordanian cuisine, known for its delicious taste and high nutritional value. In this article, we will provide the ingredients for six people, along with the preparation method. We hope you enjoy this special Jordanian dish.
Ingredients for Jordanian Makmoura:
For the Dough:
- 4 cups of whole wheat flour.
- 4 cups of all-purpose flour.
- ¼ cup of sesame seeds.
- ¼ cup of black cumin seeds (Nigella seeds).
- 2.5 cups of water.
- 1 cup of vegetable oil.
- 1 teaspoon of whole anise seeds.
- 1 tablespoon of salt.
- 1 teaspoon of white sugar.
For the Filling:
- 5 medium onions, finely chopped.
- 4 boneless chicken breasts.
- ⅔ cup of vegetable oil.
- ⅓ cup of olive oil.
- 1 teaspoon of black pepper.
- 1 tablespoon of salt.
- 1 teaspoon of ground cardamom.
How to Prepare Jordanian Makmoura:
For the Filling:
Place the chicken breasts in a pot over medium heat, sautéing them for a few minutes.
Remove the chicken breasts from the pot, add the ground cardamom, and mix until well combined. Then, chop the chicken into pieces and set aside.
In a separate pot, heat the vegetable oil and olive oil over medium heat. Add the finely chopped onions and sauté until they soften and become translucent.
For the Dough:
In a large bowl, combine all the dry ingredients (whole wheat flour, all-purpose flour, sesame seeds, black cumin seeds, anise seeds, salt, and sugar). Mix well to ensure even distribution.
Gradually add the water while mixing the ingredients until you form a cohesive dough.
Slowly add the oil while continuing to knead the dough until the dough absorbs all the oil and becomes smooth and elastic.
Divide the dough into 10 equal-sized balls. Cover the dough balls and let them rest for about 30 minutes.
Assembling the Makmoura:
Roll out each dough ball on a floured surface into medium-sized circles.
Grease a baking tray with a little oil and place the first dough circle on the tray. Spread a layer of the sautéed onions on top.
Repeat this process, layering dough circles and onions until you have 5 layers.
On top of the fifth layer, add the chopped chicken and cover it with another dough circle.
Continue layering the remaining dough circles and onions, finishing with the tenth dough circle on top.
Baking:
Preheat the oven to 200°C (390°F).
Once the oven reaches the desired temperature, place the Makmoura tray in the oven and bake until the top turns golden brown, which should take about 30-40 minutes.
