- 2 medium-sized onions, finely chopped.
- 2 tablespoons of ghee.
- 500 grams of chicken breast.

- 5 whole cardamom pods.
- 2 cinnamon sticks.
- 5 whole cloves.
- 3 bay leaves.
- 1 teaspoon of salt.
- 1/2 teaspoon of black pepper.
- 500 grams of washed, peeled, and cubed truffles.
- 1 teaspoon of ground dried lime (lumi).
- 1 teaspoon of curry powder.
- 1 teaspoon of ground cumin.
- 2 cups of soaked and drained rice.
- 1 medium-sized tomato, finely chopped.
- 4 cups of chicken broth.
How to Prepare Kabsa with Truffles and Chicken:
Cook the Chicken:
In a large pot, heat 1 tablespoon of ghee over medium heat. Add half of the chopped onions and sauté until softened.Add the chicken breast pieces and stir until the chicken changes color. Then, add the whole dried lime, cardamom pods, whole cloves, cinnamon sticks, bay leaves, black pepper, and salt.
Cover the mixture with water and let it simmer over medium heat for about 25 minutes. After that, add the cubed truffles and let the mixture cook for another 25 minutes.
Prepare the Spices:
In a separate pot, melt the remaining tablespoon of ghee over medium heat. Add the remaining chopped onions and sauté until soft.Stir in the ground dried lime (lumi), ground cumin, and curry powder. Mix everything well until combined.
