Kibbeh Bil Batata is a popular dish in many Arab countries, especially in the Levant, and even in some Western countries. It is a favorite among both adults and children, and is known for being a rich and hearty meal. While it is high in calories, it’s a beloved dish often served during special occasions and gatherings. Kibbeh comes in various forms, such as fried kibbeh, grilled kibbeh, and other regional variations.
However, it’s not ideal for those on a strict diet or for people with digestive issues, as it contains bulgur, which can be heavy on the stomach.

The main components of this dish are bulgur, meat, and potatoes, and the ingredients include:
For the Potato Layer:
- 1 kilogram of starchy potatoes
- 1 cup of breadcrumbs
- 3-4 tablespoons of melted butter or vegetable oil
- 1 egg
- 5-6 small butter cubes
- Salt (to taste)
- ½ teaspoon of black pepper
For the Meat Filling:
- 500 grams of ground beef or lamb
- 2 finely chopped onions
- Salt (to taste)
- ½ teaspoon of black pepper
- ½ teaspoon of ground cinnamon
- 1 teaspoon of sweet allspice
- 250 grams of vegetable oil
- ¼ cup of pine nuts or coarsely chopped walnuts (for garnish)
Preparation Method for Potato Kibbeh with Meat:
Preparing the Potatoes: Clean and boil the potatoes until soft. Once cooked, mash the potatoes until smooth and free of lumps. Add the egg, salt, and black pepper to the mashed potatoes and mix well until everything is combined.
Preparing the Filling: In a pan, heat the oil and sauté the chopped onions until they soften. Add the ground meat and season with salt, black pepper, cinnamon, and sweet allspice. Stir until the meat is fully cooked, about 15 minutes. If desired, add the pine nuts or walnuts to the meat mixture and stir. Allow the filling to cool slightly.
Assembling the Kibbeh: Grease a baking tray with some oil and sprinkle half of the breadcrumbs on the bottom of the tray.
Layering the Potato and Meat: Divide the mashed potatoes into two portions. Spread the first half of the potato mixture evenly over the breadcrumbs in the tray. Press it down firmly.
Adding the Meat Layer: Once the meat filling has cooled, spread it evenly over the first layer of mashed potatoes. Press the filling down gently.
Finishing the Top Layer: Spread the second half of the mashed potatoes over the meat layer, making sure to smooth it out. Sprinkle the remaining breadcrumbs on top and dot the surface with small butter cubes to help it crisp up during baking.
Cutting and Baking: Pre-cut the kibbeh into squares or the desired shape before placing it in the oven. Preheat the oven to 200°C (390°F) and bake the kibbeh for 20 to 25 minutes, or until the top turns golden brown and crispy.
Serving: Once baked, remove the tray from the oven and allow it to cool slightly before transferring the kibbeh onto a serving dish. Garnish with toasted pine nuts, walnuts, or chopped parsley if desired.
