How to Prepare Kofta with Tahini:
Prepare the Kofta: Using a meat grinder with small holes, grind together the meat, onion, garlic, parsley, coriander, and chili pepper. Collect the ground mixture in a large bowl.
Season the Kofta: Add the mixed spices, salt, and black pepper to the mixture, and knead everything together with your fingers until a smooth and consistent kofta mixture forms.
Shape the Kofta: Form the kofta into small sausage-shaped fingers using your hands. Once all the mixture is shaped, heat the olive oil in a wide, thick-bottomed skillet over medium heat until hot.
Cook the Kofta: Place the kofta fingers in the skillet and cook them, turning frequently to brown them evenly on all sides until they are fully cooked and nicely browned.
Prepare the Baking Dish: Transfer the cooked kofta fingers into an oven-safe baking dish. Preheat the oven to 180°C (350°F) and set the rack in the middle of the oven.
Prepare the Tahini Sauce: In a large bowl, mix the yogurt, tahini, lemon juice, and salt using a hand whisk. Stir well until you achieve a smooth, uniform sauce.
Cook the Sauce: In the same skillet, heat the remaining olive oil over medium heat. Add the chopped onion and garlic, stirring until they turn a light golden color. Pour the tahini mixture into the skillet and cook for a few minutes until it begins to bubble.
Combine and Bake: Pour the tahini sauce over the kofta in the baking dish. Place the dish in the oven and bake for about 15 minutes until the kofta absorbs the sauce and everything is heated through.
Garnish and Serve: Once the kofta is out of the oven, garnish the dish with fried pine nuts and serve immediately while hot.
Your kofta with tahini is now ready to enjoy! This dish is sure to be a crowd-pleaser with its rich flavors and creamy sauce. Bon appétit!
