Korean black noodles, also known as Jajangmyeon, are famous for their rich taste and high nutritional value. They are easy to prepare, requiring only 60 minutes to cook. In this recipe, I will share the ingredients for four servings and guide you through the preparation steps, hoping you enjoy this delicious dish from Korean cuisine.
Ingredients for Korean Black Noodles:
- 400 grams of Korean noodles (noodles suited for Jajangmyeon)
- ¾ cup of Korean black soybean paste (Chunjang)
- ¼ cup of vegetable oil
- 2 tablespoons of sugar
- 2 tablespoons of oyster sauce
- Cubed meat (beef, pork, or chicken, as desired)
- 1 tablespoon of rice vinegar
- 1 teaspoon of grated ginger
- 2 large onions, finely chopped
- ½ cup of finely chopped cabbage
- 1 medium zucchini, chopped
- 2 cups of chicken broth
- 2 tablespoons of cornstarch (dissolved in ¼ cup of water)
- Salt (to taste)
- Black pepper (to taste)
For Garnishing:
- 1 medium cucumber, sliced into thin strips
- ¼ cup of crushed almonds
Preparation Steps for Korean Black Noodles:
Marinate the Meat:
- In a bowl, combine the meat cubes with grated ginger, rice vinegar, black pepper, and salt. Mix well and set aside to marinate.
Prepare the Sauce:
- Heat the vegetable oil in a pan over medium heat. Add the oyster sauce, sugar, and black soybean paste (Chunjang), stirring continuously for about 3 minutes. Remove the pan from the heat and set the sauce aside.
Cook the Meat and Vegetables:
- In another pan, cook the marinated meat over medium heat, stirring occasionally until the meat changes color.
- Add the chopped onions, zucchini, and cabbage to the meat, stirring occasionally until the vegetables soften.
Combine the Sauce:
- Add the black soybean paste mixture to the pan with the meat and vegetables, stirring until everything is well combined.
- Pour the chicken broth into the mixture and bring it to a boil. Once boiling, lower the heat and let it simmer for 5 minutes.
Thicken the Sauce:
- Add the cornstarch mixture to the sauce and stir until it thickens. Let it cook for a few more minutes until the sauce reaches the desired consistency.

- Boil the Korean noodles according to the package instructions, then drain them.
