  • 1 tablespoon of vegetable oil.
  • 1 medium-sized onion, grated.
  • 4 cloves of minced garlic.
  • 1 tablespoon of ground red chili pepper.
  • 450 grams of crushed tomatoes.
  • 1 tablespoon of tomato paste.
  • Salt (to taste).
  • Black pepper (to taste).
  • 1 tablespoon of white vinegar.

How to Prepare Koshari Sauce:

  1. Heat the vegetable oil in a saucepan over medium heat until hot, then add the grated onion. Sauté the onion, stirring occasionally, until softened.
  2. Add the minced garlic and ground red chili pepper to the onions, stirring the ingredients well until they are fully combined.
  3. Add the tomato paste, crushed tomatoes, black pepper, salt, and white vinegar. Stir all the ingredients together until well mixed.
  4. Once the mixture begins to boil, reduce the heat to low and let the sauce simmer until it thickens and reaches the desired consistency.
  5. Remove the saucepan from the heat. To serve, top the koshari dish with boiled chickpeas, then pour the prepared koshari sauce over the top.
