For the Dough:

  • 12 sheets of ready-made phyllo dough (Kellaj pastry)
  • 1 kg of ready-made cream (Qishta)
  • ½ liter of fresh liquid milk
  • Crushed pistachios (optional, for garnish)
  • Vegetable oil (for frying, as needed)

For the Syrup:

  • 2 cups of white sugar
  • 1 cup of water
  • 1 teaspoon of rose water
  • 1 teaspoon of orange blossom water
  • ½ teaspoon of lemon juice

Steps to Prepare Kunafa with Cream:

1. Prepare the Syrup:

  • In a saucepan over medium heat, combine the sugar and water. Let it boil, then reduce the heat and simmer until the syrup thickens slightly.
  • Add the rose water, orange blossom water, and lemon juice. Stir well to combine, then remove the syrup from the heat and set it aside to cool.

2. Prepare the Dough:

  • Spread the phyllo dough sheets on a flat surface.
  • Place a suitable amount of fresh cream (Qishta) in the center of each sheet.
  • Fold the edges of the dough inward and roll it to form a rectangular shape.
  • Repeat the process with the remaining dough and cream filling.

3. Soak in Milk:

  • Pour the liquid milk into a bowl. Dip each filled pastry roll in the milk for about 30 seconds.

4. Fry the Pastry:

  • Heat a generous amount of vegetable oil in a pan over medium heat.
  • Fry the pastry rolls in the hot oil, turning them occasionally, until they are golden brown on all sides.
  • Remove the fried pastries from the oil and drain them thoroughly.

5. Add the Syrup:

  • Pour the cooled syrup over the hot pastries and let them soak for about 10 minutes.
  • Drain any excess syrup from the pastries.

6. Garnish and Serve:

  • Garnish the top with crushed pistachios as desired.
