  • 1.5 kg of lamb, cut into pieces
  • 2.5 cups of special Kabsa rice
  • 1.25 liters of hot drinking water
  • 1 medium-sized onion, finely chopped
  • Salt to taste
  • 1 dried lime (lumi)
  • 2 cinnamon sticks
  • 3 bay leaves
  • 1 tablespoon of black pepper
  • 3 cups of tomato juice

How to Prepare Lamb Kabsa in a Pressure Cooker:

  1. Prepare the Base: Heat the vegetable oil in the pressure cooker over medium heat.

  2. Cook the Onion: Add the finely chopped onion and sauté it, stirring occasionally, until it softens and becomes translucent.

  3. Add the Lamb and Spices: Add the lamb pieces, bay leaves, cinnamon sticks, dried lime, black pepper, and salt. Stir the ingredients well until the lamb starts to brown and the spices are evenly distributed.

  4. Tomato Base: Pour in the tomato juice and stir the mixture until well combined. Let it cook on medium heat until the sauce thickens and starts to simmer.

  5. Add Water and Cook the Meat: Pour in the hot water, stir the mixture, and close the pressure cooker. Cook under pressure for 30 minutes. Once the pressure cooker whistles, reduce the heat to low and let the meat cook.

  6. Add the Rice: After 30 minutes, release the pressure, open the lid, and add the Kabsa rice. Stir the mixture gently to combine all the ingredients. Close the pressure cooker again and cook for an additional 25 minutes under pressure until the rice and meat are fully cooked.

  7. Final Touches: Once the cooking time is over, remove the pressure cooker from the heat and serve the Lamb Kabsa in a large serving dish.
