Lamb Shanks with Pumpkin: How to Prepare This Flavorful Armenian Dish
Lamb shanks with pumpkin is a delicious Armenian dish popular across the globe. This hearty main course is often served during special occasions, gatherings, and family meals.
The dish is packed with nutritional value, primarily due to pumpkin, which is rich in essential vitamins and minerals like calcium, iron, phosphorus, potassium, and other nutrients.
The preparation takes about 30 minutes, and the cooking time is roughly one hour, with the dish serving two people.
Ingredients for Lamb Shanks with Pumpkin:
- 2 large onions, finely chopped
- 2 cloves of garlic, finely crushed
- 4 tablespoons of corn oil
- 2 lamb shanks
- 4 medium carrots, diced
- 2 medium potatoes, diced
- 300 grams of pumpkin, diced
- 2 tablespoons of tomato paste
- 2 tablespoons of red pepper paste
- Salt to taste
- Black pepper to taste
- Mixed spices to taste
- Ground dried coriander to taste
Cooking Method for Lamb Shanks with Pumpkin:
Sautéing the Aromatics: In a large pot over medium heat, add the corn oil. Once heated, add the chopped onions and crushed garlic. Stir until the onions and garlic are softened and fragrant.
Browning the Lamb Shanks: Add the lamb shanks to the pot and cook until browned on all sides.
Adding Vegetables: Once the lamb shanks are browned, add the diced carrots, potatoes, and pumpkin. Cook the mixture until the vegetables are half-cooked.
Incorporating Tomato and Pepper Paste: Stir in the tomato paste and red pepper paste, ensuring all the ingredients are well coated.
Simmering: Add hot water to the pot until it covers the ingredients. Season with salt, black pepper, mixed spices, and dried ground coriander to your preference. Allow the flavors to meld and simmer until the lamb and vegetables absorb the seasonings.
Baking in the Oven: Transfer the mixture to a clay pot and place it in a preheated oven at 180°C (350°F) for about 1.5 hours until all the ingredients are fully cooked and tender.
Serving: Once the dish is out of the oven, transfer it to a serving plate. Garnish with parsley, broccoli, or fresh cilantro, as desired. Serve with vermicelli rice or yogurt, or alongside some vegetables.
