Lebanese Zalabia is a simple and traditional dessert from Lebanese cuisine, known for its delicious taste and ease of preparation. It takes no more than 25 minutes to make and fry. Ingredients for Lebanese Zalabia:

  • 500 grams of all-purpose flour.
  • 1 cup of white sugar.
  • Half a teaspoon of ground anise.
  • Half a teaspoon of whole anise seeds.
  • Quarter teaspoon of ground cloves.
  • Half a cup of sesame seeds.
  • Half a tablespoon of instant yeast.
  • 1½ cups of warm water.
  • Vegetable oil (as needed for frying).

For the Syrup:

  • 2 cups of white sugar.
  • 1 cup of water.
  • 1 tablespoon of rose water.
  • 1 tablespoon of orange blossom water.

How to Prepare Lebanese Zalabia:

For the Syrup:

  1. In a saucepan, combine the sugar and water over medium heat until it reaches a boil.
  2. Reduce the heat and let the mixture simmer for about 10 minutes until the syrup thickens.
  3. Remove from heat, add the rose water and orange blossom water, and stir well. Set the syrup aside to cool.

For the Zalabia:

  1. In a large mixing bowl, combine the flour, ground anise, sugar, whole anise seeds, yeast, sesame seeds, and ground cloves. Mix all the ingredients thoroughly.

  2. Gradually add the warm water while kneading the mixture by hand until you achieve a smooth dough.

  3. Cover the bowl with plastic wrap and leave the dough to rest for at least two hours to rise.

  4. Once the dough has rested, shape it into equal-sized balls.

  5. Heat a generous amount of vegetable oil (about 4 cups) in a pot over medium heat.

  6. Fry the dough balls in the hot oil, turning them occasionally until they are golden brown on all sides.

  7. Remove the zalabia from the oil and place them on paper towels to absorb excess oil for about a minute.

  8. While still hot, dip the fried zalabia into the cold syrup, then remove and place them on a serving plate.
