Majboos Chicken is one of the most beloved dishes in Qatari cuisine and a traditional favorite across the Gulf region. Each country has its own unique variations, but it is known for its rich flavor and aromatic spices. In this recipe, we’ll provide the ingredients for six people along with the preparation steps.   • 2 cups of rice.
  • 1 large onion, finely chopped.
  • 3 tablespoons of ghee.
  • 2 tablespoons of vegetable oil.
  • 1 kg of chicken breast cut into cubes (or chicken thighs if preferred).
  • 1 green chili, finely chopped.
  • 5 cloves of crushed garlic.
  • 3 dried limes (lomi).
  • 5 cardamom pods.
  • 1 medium tomato, finely chopped.
  • 5 cloves.
  • 1 cinnamon stick.
  • 1 teaspoon of turmeric.
  • 1 tablespoon of mixed spices.
  • Black pepper (to taste).
  • Salt (to taste).
  • 1 teaspoon of rose water.
  • 1 cup of boiled chickpeas.
  • Chicken broth (as needed).

How to Prepare Qatari Majboos Chicken:

  1. Cooking the Chicken:

    • Heat the vegetable oil in a large pot over medium heat.
    • Add the chicken pieces and cook, stirring occasionally, until browned on all sides. Remove the chicken and set it aside.
  2. Sautéing the Onions:

    • In the same pot, melt the ghee over medium heat.
    • Add the chopped onions and cook until soft and golden.
  3. Adding Spices:

    • Add the crushed garlic, green chili, turmeric, and mixed spices to the onions. Stir the ingredients until well combined and fragrant.
  4. Preparing the Sauce:

    • Poke holes in the dried limes (lomi) and add them to the pot.
    • Return the chicken to the pot along with the chickpeas, chopped tomato, cardamom pods, cloves, cinnamon stick, salt, and black pepper.
    • Pour in enough chicken broth to cover the ingredients, stir to combine, and bring to a boil.
    • Reduce the heat to low and simmer the mixture for about 30 minutes.
  5. Cooking the Rice:

    • After the chicken mixture has simmered, add the rice to the pot, stirring gently to combine it with the rest of the ingredients.
    • Cover the pot and cook on low heat until the rice is fully cooked and fluffy, stirring occasionally to ensure even cooking.
  6. Finishing Touch:

    • Once the rice is done, sprinkle rose water over the dish.
