Mamounia – Recipe for Mamounia – How to Prepare Mamounia

Mamounia is a popular type of Arabic dessert, particularly famous throughout the Arab world. It is believed to have originated in Aleppo, Syria, and is often served as a breakfast dish. It is extremely easy to prepare, serving 6 people, and takes only 10 minutes to make.

Main Ingredients for Mamounia:

  • 5 tablespoons of ghee (either Arabic or cow ghee, as preferred)
  • 4 tablespoons of melted butter (either cow or vegetable butter, as preferred)
  • 1 ½ cups of fine semolina
  • 1 cup of sugar
  • 6 cups of warm water
  • 1 tablespoon of orange blossom water

Cheese Mixture Ingredients:

  • 250 grams of braided cheese, cut into small pieces
  • 1 cup of syrup (either sugar syrup or shira)

Topping Ingredients:

  • 1 tablespoon of ground cinnamon
  • 15 medium-sized walnuts, chopped
  • Pine nuts (optional)

Preparation Method for Mamounia:

  1. Cooking the Semolina:
    In a deep pot, add 4 tablespoons of ghee and the melted butter, and heat it over low heat until it is well warmed. Then, add the semolina and stir constantly with a wooden spoon until the semolina turns golden brown and releases a fragrant aroma.

  2. Preparing the Syrup Mixture:
    In another deep pot, add the sugar and water according to the recipe. Bring it to a boil over medium heat until all the sugar dissolves. Add the orange blossom water to the mixture.

  3. Combining the Mixtures:
    Slowly pour the water, sugar, and orange blossom water mixture into the semolina while continuously stirring. Allow the semolina to absorb the liquid and cook until the semolina grains are fully cooked, and the mixture thickens.

  4. Serving the Mamounia:
    Once ready, transfer the Mamounia to a wide serving dish.

  5. Preparing the Cheese Mixture:
    In a medium-sized pot, add half of the cheese and the syrup. Stir over low heat with a wooden spoon until the cheese completely melts. Then, spread the cheese mixture evenly over the Mamounia.

  6. Toasting the Nuts and Toppings:
    In a frying pan, melt 1 tablespoon of ghee over low heat. Add the chopped walnuts and stir them until they turn golden brown. Sprinkle cinnamon over the Mamounia, add the toasted walnuts, and distribute the remaining cheese over the dish.

Serve the Mamounia hot, garnished with pine nuts if desired.
