Dough Ingredients:

  • 3 cups of white flour
  • 6 tablespoons of vegetable oil
  • 1 teaspoon of salt
  • 1 cup of lukewarm water

Filling Ingredients:

  • 250 grams of minced meat
  • 1 small onion, grated
  • ½ teaspoon of hot red pepper
  • ½ teaspoon of salt
  • ¼ teaspoon of black pepper
  • 2 tablespoons of vegetable oil

Yogurt Sauce Ingredients:

  • 500 grams of yogurt
  • 1 clove of crushed garlic
  • ½ teaspoon of salt

Tomato Sauce Ingredients:

  • 2 cups of meat broth
  • 2 tablespoons of tomato paste
  • 1 tablespoon of sweet red pepper paste

Garnish Ingredients:

  • Toasted pine nuts (as desired)
  • Sumac (as desired)
  • Chopped parsley (as desired)

How to Prepare Mantu Roses:

  1. In a suitable bowl, mix the flour, salt, water, and oil. Knead the ingredients together until you get a smooth and firm dough. Let the dough rest for 30 minutes.

  2. In another bowl, mix the minced meat with salt, spices, grated onion, and oil. Stir the ingredients until they are fully combined.

  3. Roll out the dough on a floured surface and cut it into circular shapes.

  4. Place five dough circles in a row, slightly overlapping, and add some of the filling in the center.

  5. Fold the bottom part of the dough over the meat mixture, then roll it up to form a rose shape.

  6. Grease a baking tray with a little oil and place the Mantu Roses inside. Brush the top of the dough with a bit of oil.

  7. Preheat the oven to 180°C. Once heated, place the tray in the oven and bake until the dough turns golden brown.

  8. In a bowl, mix the yogurt, garlic, and salt together until well blended.

  9. In a saucepan, heat a bit of oil over medium heat, then add the tomato paste and red pepper paste. Stir the mixture for two minutes.

  10. Pour in the broth and salt, and bring the mixture to a boil. Remove the saucepan from the heat once it’s done.

  11. Arrange the Mantu Roses on a serving plate and drizzle with the tomato sauce and yogurt sauce. Garnish with toasted pine nuts, sumac, and chopped parsley.
