  • 2 medium-sized eggplants, cut into cubes
  • 2 tablespoons of vegetable oil
  • 2 tablespoons of olive oil
  • 1 medium-sized onion, sliced
  • 2 medium-sized tomatoes, sliced
  • 6 cloves of garlic, sliced
  • 2 tablespoons of tomato paste
  • 3 cups of vegetable broth
  • 1½ cups of cooked chickpeas
  • ¼ teaspoon of ground cinnamon
  • 1 teaspoon of dried mint

How to Prepare Eggplant and Chickpea Stew:

  1. Submerge the eggplant cubes in salted water and let them sit for 30 minutes.

  2. Drain the eggplant cubes, brush them with oil, and arrange them on a greased baking sheet.

  3. Preheat the oven to 180°C (350°F). Once heated, bake the eggplant for about 30 minutes, or until tender.

  4. In a pot, heat the olive oil over medium heat. Add the sliced onions and sauté until they become soft.

  5. Add the sliced garlic and stir until fragrant.

  6. Stir in the tomato slices and cook for another 5 minutes, stirring occasionally.

  7. Add the vegetable broth, tomato paste, and baked eggplant cubes. Stir well until all the ingredients are fully combined.

  8. Once the mixture begins to boil, reduce the heat to low, cover the pot, and let it simmer for 10 more minutes.

  9. Stir in the cooked chickpeas, dried mint, and cinnamon, and continue to simmer for another 10 minutes to allow all the flavors to meld together.

  10. Remove the pot from the heat and transfer the stew to a serving dish.
