Ingredients for Mazbi Lamb in the Oven:
For the Lamb:
- 1.5 kg of lamb leg.
- 2 tablespoons of lemon juice.
- Salt (to taste).
- ½ teaspoon of turmeric.
- ½ teaspoon of black pepper.
- 1 teaspoon of garam masala.
- 1 tablespoon of paprika.
- 3 cloves of garlic, crushed.
- 1 teaspoon of grated ginger.
- ½ cup of yogurt.
For the Rice:
- 2 cups of rice, washed and soaked for 30 minutes.
- 1 medium-sized tomato, chopped.
- 4 cups of lamb broth.
- 1 teaspoon of grated ginger.
- 2 cloves.
- 2 cardamom pods.
- 2 cinnamon sticks.
- 2 bay leaves.
- 1 teaspoon of garam masala.
- 1 tablespoon of oil.
- 1 tablespoon of ghee.
- Salt (to taste).
- 2 medium-sized onions, finely chopped.
- 4 green chili peppers, sliced.
- 2 tablespoons of finely chopped cilantro.
- Black pepper (to taste).
For Garnishing:
- Roasted cashews (as desired).
- Raisins (as desired).
How to Prepare Mazbi Lamb in the Oven:
Preparing the Lamb:
- In a bowl, mix the yogurt, crushed garlic, lemon juice, ginger, black pepper, salt, paprika, and garam masala until well combined.
- Make small slits in the lamb leg and rub the yogurt mixture all over the lamb. Let it marinate in the fridge for at least 2 hours.
- Preheat the oven to 180°C (350°F).
- Place the marinated lamb in an oiled baking tray and roast for about 120 minutes, or until the lamb is fully cooked.
Preparing the Rice:
- While the lamb is cooking, heat the ghee and oil in a pot over medium heat.
- Add the chopped onions and sauté until they soften.
