Quesadilla Ingredients:

  • 4 tortilla bread rounds.
  • ½ cup of boiled peas.
  • ½ cup of diced red bell pepper.
  • 4 tablespoons of diced hot red chili peppers.
  • ½ cup of corn.
  • 1 cup of diced tomatoes.
  • White pepper (to taste).
  • Salt (to taste).
  • 2 cups of shredded Gouda cheese.

Salsa Ingredients:

  • 2 medium-sized tomatoes, diced.
  • 4 tablespoons of finely chopped cilantro.
  • 2 finely chopped jalapeños.
  • Cumin (to taste).
  • Black pepper (to taste).
  • Salt (to taste).

How to Prepare Mexican Quesadillas:

Quesadilla Preparation:

  1. In a bowl, combine the corn, peas, red bell pepper, hot chili pepper, and diced tomatoes. Add the white pepper and salt, and mix everything together until well combined.
  2. Divide the mixture evenly between two tortilla rounds, spreading it across the surface. Then, evenly distribute the shredded Gouda cheese on top of the vegetable mixture.
  3. Place the remaining tortilla rounds on top, covering the filling to form two quesadilla sandwiches.
  4. Heat a grill or skillet and place the quesadillas on it. Cook until golden brown on one side, then flip to cook the other side until both sides are evenly browned. Repeat the process for the second quesadilla.
  5. Cut each quesadilla in half and place them on a serving plate.

Salsa Preparation:

  1. In a bowl, mix the diced tomatoes with cilantro, jalapeños, cumin, black pepper, and salt. Stir until all the ingredients are well combined.
