Ingredients for Mirza Ghasemi:
- 2 large eggplants.
- 4 tablespoons of vegetable oil.
- 6 medium-sized tomatoes, peeled and finely chopped.
- 2 teaspoons of minced garlic.
- 6 eggs.
- Salt (to taste).
- Black pepper (to taste).
- 3 tablespoons of turmeric.
How to Prepare Mirza Ghasemi:
- Using a fork, poke holes all over the eggplants. Place them on a suitable baking tray.
- Preheat the oven to 200°C (390°F). Once the oven is hot, place the tray inside and roast the eggplants for about 30 minutes until they are soft and cooked through.
- Remove the tray from the oven and let the eggplants cool for about 5 minutes.
- Peel the eggplants and mash them with a fork until smooth.
- Heat the vegetable oil in a pot over medium heat. Add the minced garlic and sauté for 2 minutes, stirring occasionally.
- Add the turmeric to the garlic and stir for an additional minute.
- Add the mashed eggplant and cook for about 5 minutes, stirring occasionally to combine all the flavors.
- Add the chopped tomatoes, black pepper, and salt to the pot. Cover and let the mixture cook for 15 to 20 minutes, stirring occasionally.
- In a separate bowl, whisk the eggs with a pinch of salt and black pepper until well combined.
- Pour the egg mixture into the pot and stir everything together. Cook for another 5 minutes until the eggs are fully cooked and the mixture is well combined.
