  • 2 tablespoons of olive oil
  • 500 grams of lamb, cut into medium-sized cubes
  • 2 medium-sized onions, finely chopped
  • 3 cloves of minced garlic
  • ½ teaspoon of ground ginger
  • 1 teaspoon of ground cinnamon
  • 1 teaspoon of mixed spices
  • 1 teaspoon of saffron
  • 300 ml of lamb broth
  • 100 grams of pitted dates, cut into large slices
  • 1 teaspoon of grated lemon zest
  • 2 tablespoons of lemon juice
  • 1 tablespoon of natural honey
  • 2 teaspoons of tomato paste
  • 2 tablespoons of toasted pine nuts
  • Pre-cooked couscous for serving (as desired)

How to Prepare Moroccan Lamb with Dates:

  1. Brown the Lamb: Heat 1 tablespoon of olive oil in a suitable pot over medium heat. Add the lamb cubes and stir occasionally until the meat browns on all sides.

  2. Prepare the Tagine: Transfer the browned lamb cubes into a tagine (traditional Moroccan cooking pot) and set it aside.

  3. Sauté the Onions: In the same pot where the lamb was cooked, add the remaining tablespoon of olive oil. Add the chopped onions and sauté, stirring occasionally until they soften.

  4. Add Spices and Garlic: Stir in the minced garlic, mixed spices, ground ginger, saffron, and ground cinnamon. Cook the mixture for a few minutes until the spices release their aroma.

  5. Prepare the Sauce: Pour the lamb broth into the pot, stirring until everything is well combined. Pour the mixture over the lamb in the tagine and cover it with a lid.

  6. Cook in the Oven: Preheat the oven to 200°C (392°F). Once the oven is ready, place the tagine inside and cook for about 90 minutes, allowing the flavors to meld and the lamb to become tender.

  7. Add Dates and Other Ingredients: After 90 minutes, add the sliced dates, grated lemon zest, lemon juice, tomato paste, and honey to the tagine. Return the tagine to the oven and cook for an additional 20 minutes.

  8. Serve: Place the pre-cooked couscous on a serving platter. Remove the tagine from the oven and spoon the lamb and sauce over the couscous. Garnish with toasted pine nuts.
