Ingredients for Moroccan Kofta Tagine:
For the Sauce:
- 1 kg of tomatoes, diced
- 1 medium-sized onion, finely chopped
- 2 teaspoons of cumin
- Salt (to taste)
- 3 tablespoons of chopped parsley
- 3 cloves of garlic, minced
- ¼ cup of olive oil
For the Kofta:
- 700 grams of ground meat
- 1 medium-sized onion, finely chopped
- ½ cup of chopped parsley
- 1 teaspoon of paprika
- 1 teaspoon of salt
Additional Ingredients:
- 1 egg
Instructions for Preparing Moroccan Kofta Tagine:
Preparing the Sauce:
In a suitable pot over medium heat, add the chopped onions and diced tomatoes. Cover the pot and let the ingredients cook for about 5 minutes.
Add salt, chopped parsley, minced garlic, cumin, and olive oil to the pot. Cover again and let the mixture simmer over low heat for another 10 minutes.
Preparing the Kofta:
In a mixing bowl, combine the ground meat, chopped parsley, chopped onion, paprika, and salt. Mix thoroughly until all ingredients are well blended, then divide the mixture into eight equal-sized balls.
Add the kofta balls to the simmering sauce. Pour in ¼ cup of drinking water, cover the pot, and let everything cook on low heat.
After about 40 minutes, crack an egg over the kofta balls, then cover the pot again and cook for an additional 10 minutes.
